Irish Beer Cheese

We’re bringing you another simple and tasty recipe for St. Patty’s Day (or really any day.) This dip is super versatile and can be used as a topping or grab some pretzels, homemade chips, etc. and dunk away! We went for a fruit-infused beer from Biker BrewHouse for this…cheese and berries are a perfect combo and the flavor really turned out great in this recipe.

Irish Beer Cheese


2 tbsp. butter

2 tbsp. flour

1 12oz. bottle of fruit-infused beer

8 oz. Irish cheddar

8 oz. smoked gouda or any mild cheese

2 tsp. course ground pepper

Salt to taste


-Melt the butter on medium heat and mix in the flour. Whisk until fully dissolved to create a roux. You know your roux is ready when it smells like buttered popcorn.

-Stir in beer and continuously whisk until mixed. Turn the heat on high and bring to a boil.

-Once it boils, bring to a simmer, add cheese and pepper stirring occasionally until cheese is fully melted. Add salt to taste and transfer to a serving dish. Enjoy immediately.
