Reuben Style Potato Skins 

Ingredients 

6 small potatoes 

12 oz. sauerkraut  

12 oz. deli corned beef

6 oz. shredded swiss cheese

Thousand Island Dressing

Directions

-Preheat oven to 400 degrees. 

– Stab potatoes with fork and place directly on oven rack. Bake until soft to touch, or can easily be poked with a knife, around 10 min.

-Remove potatoes from oven once cooked and cut in half. Scoop out flesh. 

-Place potatoes skins on a baking sheet and fill each skin with sauerkraut, corned beef, and swiss cheese.

-Turn oven down to 375 and put on broil. 

-Put loaded potato skins back into the oven until cheese is melted and lightly browned on top, around 5 min. 

-Remove skins from oven and drizzle with thousand island dressing, enjoy immediately.
